Take a filet of pikeperch, add salt pepper and lemon juice and cook in a moderate oven for 8 - 10 mins.

During this time cook a handful of small fish from the Loire (friture) in a mixture of half oil, half butter until golden-brown. Keep hot.
Take the juice from the fish, add a glass of white Sancerre wine, reduce then thicken with butter.

Presentation : On a bed of leeks, decorate with capers and lemon.

Serve with white Sancerre wine.
