Old fashioned eggs in wine
Oeufs au vin à l'ancienne
 
Serves 4 people
8 fresh eggs
20 cl red Sancerre
1 carrot
1 onion
2 garlic cloves
mixed herbs
80 g plain flour
salt, pepper
a few mushrooms
several strips of smokey bacon
a few small onions
4 slides bread

Fry the chopped carrot and onions in a knob of butter. Add the flour, red wine, herbs and garlic.

Reduce slowly until the sauce coats the spoon. Add the salt and pepper and sieve.

Bring a pan of water to the boil. Add the vinegar then break the eggs one by one into a cup and slide them into the water. Leave them to cook for 2 mins then take out and drain.

Put 2 eggs on each plate. Coat with the sauce then decorate with the mushrooms, bacon, fried onions and a slice of toasted bread rubbed with garlic.
