Fry the chopped carrot and onions in a knob of butter. Add the flour, red wine, herbs and garlic. Reduce slowly until the sauce coats the spoon. Add the salt and pepper and sieve. Bring a pan of water to the boil. Add the vinegar then break the eggs one by one into a cup and slide them into the water. Leave them to cook for 2 mins then take out and drain. Put 2 eggs on each plate. Coat with the sauce then decorate with the mushrooms, bacon, fried onions and a slice of toasted bread rubbed with garlic. |
