Serves 4 people
800 g bleaks and gudgeons
flour
sunflower oil
seasoning

Empty the fish and rinse well in warm water. Drain and dry in a tea-towel. Roll each fish in flour.

Dip the fish in very hot oil once, then a second time and stop cooking once the fish are nice and crisp. Add salt.

Taste with a glass of white or rosé Sancerre wine.
